Diri ak Djon Djon (Haitian Black Mushroom Rice)

"Diri djon djon" is Haitian Creole for black mushroom rice, a flavorful dish my Haitian husband taught me to make. It's so good, we cook it at least every two weeks! Now he jokes that I make it better than he does. Pair it with boiled plantains (bannann peze) for a complete meal.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 cup canola oil

  • 1 Scotch bonnet chile pepper, chopped

  • 2 cubes black mushroom-flavored bouillon (such as Maggi® Djon Djon)

  • 1 cube chicken bouillon (such as Maggi®)

  • 1 cube seasoning bouillon (such as Maggi®)

  • 2 tablespoons crushed red pepper

  • 2 tablespoons onion powder

  • 2 tablespoons salt

  • 2 tablespoons ground black pepper

  • 1 tablespoon ground thyme

  • 3 tablespoons minced garlic

  • 2 cups frozen lima beans

  • 2 (14 ounce) cans coconut milk

  • 6 cups water

  • 3 cups uncooked jasmine rice

Directions

  1. Heat oil in a large pot over medium heat. Add chile pepper, bouillon cubes, crushed red pepper, onion powder, salt, black pepper, and thyme. Stir until cubes dissolve.

  2. Add garlic and sauté for another 4 minutes. Increase heat to medium-high. Add lima beans and cook until defrosted, about 4 minutes. Add coconut milk and bring to a boil. Stir until mixture turns very dark.

  3. Meanwhile, bring water to a boil in another pot. Cook rice according to package directions, about 10 minutes. Reduce heat to medium and add coconut milk mixture. Cook for about 7 minutes more. Reduce heat to low.

  4. Place a clean dishcloth over the pot. Put a lid over the top and allow to steam for at least 15 to 20 minutes. Uncover and serve.

Cook's Notes:

You can use a habañero pepper instead of a Scotch bonnet.

Use 1/2 of an onion, chopped, instead of powder, if preferred.

Use 3 sprigs of fresh thyme instead of dried, if preferred.
